Two Minute Breakfast Smoothie I've been making lots of smoothies this week, and found this easy breakfast smoothie online. To make it gluten free, just swap out the regular porridge oats for gluten free oats. Anyway then I discovered these are literally the best cupcakes I've ever had! www.glutenfreepalate.com/gluten-free-vanilla-bean-cupcakes/ Savory Baked Basa, Potatoes, and Veg Ingredients: 2 fillets of Basa (these can be fresh or frozen) Pinch of salt & pepper, paprika, mixed herbs,Tsp olive oil 4 baby potatoes (washed and peeled) Mixed veg of your choice (We used frozen broccoli and cauliflower from Aldi) Method: Coat the fish with all seasoning & oil Cook in the oven at 180 for 15/20 minutes At the same time, boil your peeled potatoes until soft Boil your vegetables in a pot or in the microwave Serve with a slice of lemon Garlic and Yogurt Marinated Chicken Our pal Lauren told us about this recipe, and we made it last night to go with a salad. It was SO GOOD and all Gluten Free! If you want to make it healthier just use fat free greek yoghurt. https://preheatto350.com/easy-paprika-chicken-marinated-yogurt-low-carb-gluten-free-sugar-free/ Homemade Gluten Free Lamb Gyros We have been talking about greek food for the past week, so when we went shopping today we bought ingredients to make some greek wraps! It was amazing, healthy, and all gluten free! It also cost us under £5 to make this meal for both of us. Ingredients: Roughly 300g Lamb (We used minted lamb skewers from Lidl, but any minced or diced lamb would work too) Gluten free wraps (We used Warburtons high protein Gluten Free wraps from Morrisons) 1 Avocado, 1/4 cup of cucumber, 5 cherry tomatoes, half a bag of mixed leaf salad (All from Lidl) About 1/5 of a block of Feta (Depending on how much Feta you want) 5 Tbsp natural fat free yoghurt Pinch of garlic salt, pinch of mixed herbs, pinch of salt, pinch of pepper, 1 tsp lemon juice Salad: Chop cucumber, tomatoes, and feta and mix in with mixed leaves in salad bowl (If you want, add balsamic vinegar and anything else you'd like in your salad.) Avocado sauce: Chop and mash 1 avocado, add 1 tbsp natural fat free yoghurt, salt, pepper, and lemon juice. Mix together in a wee bowl. Garlic Sauce: Mix 4 tbsp of natural fat free yoghurt, garlic salt, mixed herbs, salt, pepper, and a drizzle of lemon juice. Lamb: Remove lamb from skewers, or dice lamb if necessary. We cooked the lamb pieces in a frying pan for about 10 minutes on medium/high heat (or until it looks like it's cooked). If you'd prefer to do this in the oven that's fine too. We then spread the avocado sauce over the wraps, spread some salad down the centre, added the lamb, then drizzled the garlic sauce over the top before folding the wrap securely. Misty Copeland's Spinach and Goats Cheese Salad This recipe is taken from Misty Copeland's 'Ballerina Body' book. We absolutely loved it, and felt that it made for a really different and exciting salad. For the salad Ingredients: 1/2 cup dried cherries (We substituted for apples as that's what we had in the house and I love an apple in a salad) Packet of chopped baby spinach, 1/2 cup chopped walnuts, 1/2 cup crumbled goat's cheese, Half a red onion, finely chopped Method: mix all ingredients together in a large salad bowl, the divide between plates (This recipe serves 2-4) For the dressing Ingredients: 1/2 cup white wine vinegar, 1/4 cup olive oil, 1/4 cup raspberries , 2 tsp honey Method: Combine all ingredients in a blender of food processor and blend until smooth. Store in the fridge for up to 4 days, though it is best when it's fresh. |
